Strangely enough, the name of the cheese does not actually identify its provenance. Originating in Scotland in the 1970s, it was soon transferred to Leicestershire. The name was probably derived from the colour of its paste – i.e. orange, coloured with annatto, a natural dye – as Cheshire has a similar salmon pinky-orange colour. Made by the cheesemakers at Cropwell Bishop, this cheese is very similar in style to Stilton, with a sharp, metallic edge coming from the roqueforti moulds. However the cheese is more mellow in flavour than Stilton, making it a good choice as a snacking cheese at any time of day, especially at lunch.
