From the northernmost sections of the Biella province, close to Aosta, this is a typical rustic-style traditional cheese with a faded orange washed rind dotted with patches of grey and white bloomy moulds. The smooth-textured semi-hard pate is fruity and nutty to the taste with hints of smoky sweetness – a meeting point between Fontina and Taleggio. A good cheeseboard choice.
